Teriyaki Vegetable Stir Fry with Rice

Served over fragrant jasmine rice, this dish is a delectable and savory stir fry that showcases a colorful medley of vegetables cooked in a flavorful teriyaki sauce. A tasty and healthful weeknight supper option is this Teriyaki Vegetable Stir Fry, which comes together quickly and easily.

Ingredients:

  • 1 cup jasmine rice

  • 2 cups water

  • 2 tablespoons vegetable oil

  • 1 onion, thinly sliced

  • 2 cloves garlic, minced

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 cup broccoli florets

  • 1 cup snap peas

  • 1 cup carrots, thinly sliced

  • 1/2 cup teriyaki sauce

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1 tablespoon honey

  • 1 teaspoon sesame oil

  • 1/2 teaspoon ginger, minced

  • 1/4 teaspoon red pepper flakes optional

  • Sesame seeds and green onions for garnish

Instructions:

Rinse the jasmine rice under cold water until the water runs clear


In a saucepan, combine the rinsed rice and 2 cups of water


Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and water is absorbed


Remove from heat and let it sit, covered, for 5 minutes


Fluff with a fork before serving


In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat


Add the thinly sliced onion and minced garlic to the skillet


Stir-fry for 2-3 minutes, or until the onion begins to soften


Add the sliced red and yellow bell peppers, broccoli florets, snap peas, and thinly sliced carrots to the skillet


Stir-fry for an additional 4-5 minutes, or until the vegetables are tender-crisp


In a small bowl, whisk together the teriyaki sauce, soy sauce, rice vinegar, honey, sesame oil, minced ginger, and red pepper flakes if using


Pour the teriyaki sauce mixture over the stir-fried vegetables in the skillet


Stir well to coat all the vegetables in the sauce


Cook for an additional 2 minutes, or until the sauce thickens slightly


Serve the teriyaki vegetable stir fry over cooked jasmine rice


Garnish with sesame seeds and chopped green onions
