Pumpkin Spice Macaron

Indulge in the warm and cozy flavors of fall with these Pumpkin Spice Macarons. The delicate almond cookies are filled with a luscious pumpkin spice buttercream, making them the perfect treat for autumn gatherings.


Ingredients:

  • 110g almond flour

  • 200g powdered sugar

  • 2 tsp pumpkin spice

  • 100g egg whites aged for 24 hours

  • 40g granulated sugar

  • Orange food coloring optional

  • 1/2 cup canned pumpkin puree

  • 1/4 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp cloves

  • 1/4 tsp allspice

  • 1/4 tsp ginger

  • 1/2 cup unsalted butter room temperature

  • 2 cups powdered sugar

  • 1 tsp vanilla extract

Instructions:

Preheat your oven to 300F 150C


Line a baking sheet with parchment paper or a silicone baking mat


Sift together almond flour, powdered sugar, and pumpkin spice into a large bowl


In another bowl, beat aged egg whites until foamy, then gradually add granulated sugar, continuing to beat until stiff peaks form


If desired, add a few drops of orange food coloring to the egg white mixture


Gently fold the dry ingredients into the egg white mixture until fully combined, creating a smooth batter


Transfer the batter to a piping bag with a round tip


Pipe small rounds onto the prepared baking sheet, spacing them about an inch apart


Tap the baking sheet on the counter to remove air bubbles, then let the macarons sit for 30 minutes to form a skin


Bake in the preheated oven for 15-18 minutes, or until the macarons are set and have firm feet


While the macarons are baking, make the pumpkin spice buttercream filling


In a bowl, combine pumpkin puree, cinnamon, nutmeg, cloves, allspice, and ginger


In another bowl, beat the room temperature butter until creamy


Gradually add powdered sugar and vanilla extract, mixing until smooth


Fold the pumpkin puree mixture into the buttercream until well combined


Once the macarons have cooled, pair them up by size and spread a generous amount of pumpkin spice buttercream on one shell, then sandwich it with another


Chill the macarons in the refrigerator for at least 24 hours to let the flavors meld
