Grain-Free Molasses Crinkle Cookies

These grain-free molasses crinkle cookies are a delicious treat for those on a gluten-free, dairy-free, and refined-sugar-free diet. They're soft, chewy, and bursting with warm spices and rich molasses flavor.

Ingredients:

  • 2 cups almond flour

  • 1/4 cup coconut flour

  • 1/2 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground ginger

  • 1/4 teaspoon ground cloves

  • 1/4 teaspoon salt

  • 1/3 cup molasses

  • 1/4 cup coconut oil, melted

  • 1/4 cup maple syrup or honey

  • 1 teaspoon vanilla extract

  • 1/2 cup coconut sugar or granulated monk fruit sweetener

  • Optional: additional coconut sugar for rolling

Instructions:

Warm the oven up to 175F 350C


Put parchment paper on the bottom of a baking sheet


There is baking soda, cinnamon, ginger, cloves, and salt in a large bowl


You need to mix them together with a whisk


Melt the coconut oil and add it to another bowl


Then, add the maple syrup or honey and vanilla extract


Slowly add the wet ingredients to the dry ones while stirring them together


Put the dough in the fridge for 30 minutes to make it firm


Take tablespoon-sized chunks of dough and roll them into balls


For a crinkled look, you can roll each ball in extra coconut sugar if you want to


Spread the dough balls out on the baking sheet that has been prepared


It should be baked for 10 to 12 minutes, or until the edges are set but the middle is still soft


Take it out of the oven and let it cool for 5 minutes on the baking sheet


Then, move it to a wire rack to finish cooling
