Coconut Cake Bread with Chocolate Frosting

Indulge in a delicious and Paleo-friendly dessert with this Coconut Cake Bread topped with rich chocolate frosting. It's gluten-free, dairy-free, and perfect for satisfying your sweet cravings without any refined sugars.


Ingredients:

  • 2 cups almond flour

  • 1/2 cup coconut flour

  • 1/2 cup unsweetened shredded coconut

  • 1/2 cup coconut oil, melted

  • 1/2 cup honey

  • 4 large eggs

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon sea salt

  • For Chocolate Frosting:

  • 1/2 cup coconut cream

  • 1/4 cup cocoa powder

  • 1/4 cup honey

  • 1/4 cup coconut oil, melted

  • 1/2 teaspoon vanilla extract

Instructions:

Set the oven to 350 degrees Fahrenheit 175 degrees Celsius and coat a loaf pan with coconut oil


Almond flour, coconut flour, shredded coconut, baking soda, and sea salt should all be combined in a big mixing bowl


Mix the eggs, honey, vanilla extract, and melted coconut oil in a different bowl


To create a thick batter, combine the wet and dry ingredients thoroughly


Spread the batter evenly in the loaf pan that has been greased


Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean, in a preheated oven


Make the chocolate frosting while the cake bread cools


Coconut cream should be heated in a small saucepan over low heat until it begins to simmer


Take off the heat and blend in the vanilla extract, melted coconut oil, honey, and cocoa powder until smooth


Give the frosting a few minutes to thicken and cool


After the cake bread cools, cover it with a layer of chocolate frosting


Garnish with an additional handful of shredded coconut, if desired


Cut into pieces and present
