Avocado Mango Black Bean Salad

This Avocado Mango Black Bean Salad is a healthy and refreshing dish that is full of bright colors and flavors. You can eat it for lunch or as a side dish with any other meal. The dressing made with lime zest goes well with the creamy avocado, sweet mango, and hearty black beans.

Ingredients:

  • 2 ripe avocados, diced

  • 1 large mango, diced

  • 1 can 15 oz black beans, rinsed and drained

  • 1 red bell pepper, diced

  • 1/2 red onion, finely chopped

  • 1/4 cup fresh cilantro, chopped

  • Juice of 1 lime

  • 2 tablespoons olive oil

  • Salt and pepper to taste

Instructions:

Dice the mango, avocados, black beans, red bell pepper, red onion, and cilantro and put them all in a large bowl


Pour olive oil and lime juice over the salad ingredients


Add pepper and salt to taste


Toss gently until everything is well mixed


You can serve it right away or put it in the fridge for 30 minutes before you serve it so the flavors can blend
